Table Service (Criteria)

Recipients of the Table Service credential have demonstrated concept proficiency and completed the following tasks:

Activity 1 – Breakfast
(a) Arranged articles in correct positions on the placemat.
(b) Poured water, filling glasses 3/4 full.
(c) Recorded information correctly on guest check. (juice first, main dish in middle, and drink near the bottom)
(d) Served each item according to instructions on the audio file.(Evaluator may choose substitute a real customer in place of tape customer)
(e) Computed the item costs correctly, including sales tax.
(f) Presented check to customer by placing the check on a small tray.
(g) Thanked customer.
(h) Bused the dishes, stacking them correctly.
(i) Washed and dried the table top.

Activity 2 – Lunch
(a) Arranged articles in the correct positions on the placemats.
(b) Recorded information correctly on guest check. (juice first, main dish in the middle, and drink near the bottom),
(c) Recorded information neatly on guest check.
(d) Served each item according to instructions on Lunch audio file.
(e) Computed the item costs correctly, including sales tax.
(f) Presented check to the customer.
(g) Bused the dishes, stacking them correctly.
(h) Washed and dried the table top.

Activity 3 – Dinner
(a) Arranged articles in the correct place on the placemats.
(b) Brought water glasses to customers and placed them right above the knife.
(c) Handed a menu to each customer and greeted each one.
(d) Recorded information correctly on guest check. (juice, soup, at top, main course in the center, and drink or dessert at bottom)
(e) Repeated order back to customer.
(f) Served drinks from the right hand side to each customer.
(g) Served remainder of the meal serving items from the left and removing from the right side.
(h) Asked customer if dessert is desired and recorded information.
(i) Bused main course before serving dessert.
(j) Computed guest check, including sales tax.
(k) Presented guest check to customers.
(l) Bused dishes.
(m) Washed and dried the table tops
